ReMarkable Paper Pro & ReMarkable 2 is probably the best writing experience. Pro has an awesome colorful display but sucks in the apps ecosystem, sync, backups, etc. No backlight at all.

Supernote is either the best or the second best in writing. It's possible to sideload Android apps, including Obsidian. Sucks a bit because of the black&white display. No backlight at all.

Boox Note Air 4c is a bit worse in writing than Remarkable and Supernote. It's fully compatible with the Android ecosystem and it has a colorful display. Perhaps, the most versatile e-ink device. Other Boox tablets are near the end of their release cycle.

iPad with paperlike film and pencil is just a fraction worse in writing. Not perfect at reading because of the non-e-ink display. Wins in everything else: ecosystem, responsiveness, smoothness, and UX overall.

Kindle Scribe is mediocre in handwriting. Very limited in integrations & ecosystem. No way to install Obsidian. Black&white display. The same is true for Kindle Colorsoft, except for the display, but it doesn't have writing capabilities.

Viwoods is an interesting device with better-than-average AI integrations, handwriting recognition, etc. Allows to install apps from Google Play Store and build a nice workflow
